Why We Smoke Our Own Brisket

There's a moment — somewhere around hour ten of a brisket smoke — where the kitchen smells like a campfire and a steakhouse had a very good evening together. That moment is exactly why we do this.

The Art of Slow Smoking

We made a choice early on to smoke our own proteins. Once you've tasted brisket that's been on an applewood smoke for 14 hours, you can't un-taste it. The difference between standard preparation and authentic, low-and-slow smoked meat is astronomical.

Many event menus rely on quick, high-heat methods for efficiency. But brisket is a stubborn cut of meat. It requires patience, precise temperature control, and a deep understanding of how wood smoke interacts with collagen and fat. We don't view smoking as a cooking method; we view it as a culinary discipline.

The Process

We source whole briskets — the packer cut, 14–18 pounds — from local Ontario farms. We believe in sustainable sourcing, ensuring the meat is of the highest quality before it even touches the rub. Supporting local agriculture not only guarantees a fresher product but also strengthens our community food system.

They're rubbed 24 hours in advance with our house blend: coarse black pepper, smoked paprika, garlic powder, and flaked sea salt. This simple but powerful combination helps build a robust "bark" (the dark, flavorful crust on the outside) while the meat smokes.

The smoker runs at 225°F. We use Ontario applewood, which burns clean and sweet, adding a nuanced fruitiness rather than overpowering the beef. The brisket sits in that smoke for anywhere from 12 to 16 hours, depending on weight, humidity, and what the meat tells us.
